EASY ENCHILADAS

1 lb extra lean ground beef
1/2 c chopped onion
1 tsp minced garlic
16 oz jar tomatillo salsa
1/4 c chopped fresh cilantro
6 oz box Mexican rice, cooked
7 oz pkg shredded 2% Fiesta Blend Cheese
20 oz pkg burrito-size flour tortillas
10 oz can enchilada sauce

In a large skillet, combine beef, onion, and garlic; cook over med heat until beef is browned and crumbly.  

Drain.  

Stir in salsa, cilantro, cooked rice, and 1 c cheese.

Spoon mixture into tortillas; foo up, and place seam side down in a sprayed 13x9.

Top with enchilada sauce; bake for 30 min at 350 degrees F or until hot.  

Sprinkle with remaining cheese; bake 5 min.
