Chicken & Sausage Jambalaya
(This was originally a Shrimp and Sausage Jambalaya but due to seafood allergies...)

2 c long-grain rice
5 c chicken broth
1/2 tsp ground cumin
1/4 tsp salt
1/4 tsp pepper
1/4 tsp ground red pepper
2 T butter
1 lb chicken cut into bite sized pieces
12 oz pkg turkey smoked sausage, sliced
1 onion, finely chopped
2 tsp minced garlic
2 green bell peppers, finely chopped
8 oz can tomato sauce
1/4 c chopped green onion
